

The story of that meal is the story of the farmers who worked
on high altitude alps during summer time. They lived in huts and
produced cheese from the milk of their cows. Basic food were
spuds and homemade products as cheese. One of their main meals
is known as “Fodue”, hot cheese “soup”.
Less known is La Raclette, originally they heated the surface of the cheese over the fire till it became brown and nice and soft.
Nowadays we have 3 different devices to eat cheese this traditional way. Raclette is at its best eaten with young potatoes and pickles and gherkins, a bit of pepper and paprika sprinkled on top of the cheese, some people have mushrooms or diced ham with it.

The smallest and most handy device is the 'pan raclette oven'

2. Pre-heat the raclette appliance for about 15 minutes and then place the prepared cheese
into the holder. Ensure that the cut is horizontal to the entire length of the heater.
3. Fix the cheese with the cheese holder screw.
4. Wind up the cheese holder until the cut end of the cheese is 2cm below the
heating element. Melt the cheese until the upper surface has the desired consistency.
5. Turn the cheese away from the heater.
6. Tip the cheese holder. Use the smooth side of a knife to scrape off the melted cheese
on to a plate. Take care not to exert too much pressure when scraping.


Whenever a large party partake in raclette, it is a good idea to accompany it with cold meats, sausage or ham with black bread - as it is impossible to avoid waits between turns.
Allow 200 - 300g of cheese per person for a proper raclette. Traditionally raclette is served with boiled potatoes, gherkins and pickled onions. However there are no limits to culinary fancies: pickled mushrooms or vegetables to name a few. The cheese itself is seasoned with freshly ground black pepper. A cool dry, tangy white wine, or tea go particularly well with this meal.
Instead of potatoes, polenta can also be served as a side dish. A heaped spoon is enough for each raclette. The polenta can either be served chilled or fried until crispy. Sauteed mushrooms, for example, make a nice addition.
Thin cut, air dried or smoked bacon, approx. 1mm thick and 2-3 cm wide slices are recommended for this special, spicy raclette. Fry the bacon slices to a dark brown and then serve them with the raclette.
