Primarily from Médoc Bordeaux, Cabernet Sauvignon is well known worldwide. Winemakers have learned to balance its tannins and their ageing to procure other nuances such as blackcurrant, leather, cedar, spices and black fruit. It is also often used to produce Vins de Pays, and is successfully fermented on the grape pulp in areas like Languedoc to produce a wine that is excellent consumed young. Worldwide – from Moldavia to South Africa - at least 170,000 hectares are planted with Cabernet Sauvignon. This late-ripening variety is resilient, but requires a warm climate to reach optimum ripeness.

Blessed with a fine sunny climate overlooking the Mediterranean sea. France’s Pays d’Oc region is the largest vineyard in the world. Unlike some other regions of France that require a knowledge of French geography to decipher the wine label, Vins de Pays d’Oc wines are comfortingly labelled by the principal grape variety. Pays d’Oc wines offer excellent quality, and value.
Characteristics;
Complex aromatic palette suggests blackcurrant, cherry, elderberry, green pepper. Ageing exalts notes of game, leather, forests, spice and liquorice. Structured and rounded.
Serve with: Roast, venison, barbeque and cheese.
Cellaring: Drink within 3 years.
